Chicken Enchilada Soup
1/3 cup Red Chile Chicken Soup Base
1 lb. cooked chicken meat
3 cups diced canned tomatoes
1/2 cup grated cheddar cheese
8-10 fresh corn tortillas, chopped
2 quarts chicken broth or water
Bring all ingredients to a boil. Reduce heat and simmer for 1 hour.
