Kansas City Seasoning
Victoria Taylor's Kansas City Seasoning combines black peppercorns with brown sugar, paprika, garlic, mustard seeds and herbs to create the perfect rub for flavoring steaks and barbecue pork. The black pepper and paprika provide some blackening and the brown sugar caramelizes a bit during cooking to create a slight glaze on the meat. Try her Kansas City Grilled Steak or Kansas City Barbecue Pork Ribs at your next family cook-out. Kansas City Grilled Steak Choose four single serving size steaks (about 5 to 8 oz. each). Steaks can be filet, rib-eye, sirloin or T-bone. Coat all sides of the steaks with Victoria Taylor's Kansas City Seasoning (about 2 tsp. per steak) and let them sit while you prepare the grill. Use of a charcoal grill is preferred. Start the coals in a pile and spread them when you are ready to cook. The coals for grilling should be in a thick single layer. Place the steaks on the grill for 5 to 6 minutes per side. This should yield medium rare to medium results. The steaks will continue to cook for several minutes after they are removed from the grill. Serve with potatoes such as baked or mashed and a small salad on the same plate for color and texture.
