Moroccan Seasoning
This Moroccan Seasoning is great for lamb, couscous, hummus and chicken dishes. The distinctive flavor comes from cumin, garlic and caraway. Victoria's recipe for Classic Moroccan Hummus is very easy and has a much more flavorful and fresh taste than anything you can buy in the grocery store. Also, try her recipes for Moroccan Couscous and Moroccan Lamb Stew. Classic Moroccan Hummus Combine the following ingredients in a food processor: one 7 3/4 oz. can chick peas, drained, 2 tsp. Victoria Taylor's Moroccan Seasoning, 2 Tbsp. extra virgin olive oil, 1 Tbsp. lemon juice, and salt to taste. Pulse the mixture until it's fairly smooth. Make this ahead of time so that it can sit in the refrigerator for at least an hour to let the flavors combine. Garnish with finely chopped red onion if desired. Serve with pita bread or any crusty bread or crackers.
