Texas Red Seasoning
Victoria Taylor uses seven different chiles and peppers to blend her Texas Red Seasoning including jalapeno so the aroma is pungent and spicy. The depth of flavor comes from cumin, garlic, onion and herbs. This is the classic blend Victoria uses in her Sunday Supper Chili and Texas Red Chili. Her recipe for Southwestern Fajitas is a family favorite and really brings out the rich chile character of this blend. Southwestern Fajitas For 4 large servings, cut 4 boneless chicken breast halves into 1/2 " strips and marinate for 30 minutes in 3 Tbsp. olive oil, juice from 4 limes, and 3 Tbsp. Victoria Taylor's Texas Red Seasoning. Transfer chicken to hot skillet, reserving marinade and cook until done and set aside. Cut 1 large onion and 1 large green and red bell pepper into 1/2 " strips and saute in remaining marinade until crisp and tender. Combine with chicken and serve warm on tortillas. Garnish with cheese, salsa and guacamole.
