In the early part of the dry season (November to February), people in northern Laos harvest Khai (river weed), a freshwater river vegetable that flourishes in the Mekong river and its tributaries. Piles of long bright green strands are sun-dried before being cooked or pressed. Kaipen is the dried pressed form, a nori-like dark green sheet studded with dried sesame seeds and local vegetables. Best lightly oiled and baked, grilled over charcoal or deep-fried quickly to crisp; use Kaipen as a wrap for poaching and roasting fish and/or meat.
