Sauterne California Cooking Wine
|
Barrel aged in limited quantities and seasoned with 1.5% sea salt, our Sauterne Cooking Wine is a high quality slightly dry white wine that is full flavored, smooth, and balanced. Its versatile white wine flavor enhances chicken and fish dishes and adds depth and dimension to sauces and even desserts. 2700 cases have been aged to perfection.
Chicken Sauterne - 2 1/2 lbs. whole chicken, cut up
- 1/2 cup Napa Valley Natural Oil
- 1/2 cup Napa Valley Naturals Organic Red Wine Vinegar
- 3 cloves garlic, minced
- 2 Tbsp. dried oregano
- 1 cup dried plums
- 1/2 cup pitted green olives
- 1/4 cup capers with juice
- 2 bay leaves
- 3/4 cup brown sugar
- 3/4 cup Napa Valley Naturals Sauterne Wine
- 2 Tbsp. chopped parsley
- pepper to taste
Marinate chicken pieces for 6-8 hours or overight in olive oil, vinegar, garlic, oregano, plums, olives, capers (with juice), bay leaves, and pepper. Preheat oven to 350 degrees F. Arrange chicken in single layer in shallow baking dish. Add marinade, wine, brown sugar, and parsley. Bake 50 minutes to 1 hour or until chicken is done. Serves 4.
