Victoria Gourmet honors The King of Spice with 4 New Premium Ground Pepper Varieties

Woburn, MA….Victoria Gourmet introduces new premium ground pepper in 4 ready-to-use varieties at the 2008 Fancy Food Show in San Diego.

The new products are:

	Cracked Black Pepper - highest quality Malabar Black Pepper cracked to achieve a consistent piece size of 1/3 of a whole peppercorn. This is a potent grind that is ideal for "au poivre" recipes and preparing a peppercorn crust for tenderloin.		Chef's Grind Black Pepper - Victoria's favorite grind of Malabar Black Pepper for everyday cooking and garnishing. The piece size is slightly larger than typical medium ground pepper for a bit more flavor impact.
	Shaker Grind Black Pepper - this is the very fine grind of high quality Malabar Black Pepper for all pepper shakers including the very old fashioned ones with the tiniest of holes for the ground pepper to flow through.		Ground White Pepper - more popular in Europe than black pepper, white pepper has a slightly spicier note and is often used in white sauces, baking and finishing.

Through the ages, pepper has often been referred to as the "King of Spice". Based on the strong and growing popularity of pepper, the king retains the crown. The consumption of pepper continues at a staggering rate and there appears to be no evidence that it will slow down any time soon. In 2007, projected U.S. black pepper imports are over 45 thousand tons.
