    Winning Recipe: Chocolate Flourless Cake

    Tip or Trick

    White chocolate pistols melt at a low temperature. It is good to pre-heat a bowl over water, then add chocolate and remove from heat. Just stir until melted.

    Biography, Position, & Company Information

    Attended El Centro College, 1991. I worked at the Adolphus Hotel for 5 years while attending culinary school. I have moved around the country working and developing my skills. I now work at Paris Von Dome at night and Neiman Marcus in the mornings.

    Winning Recipe:
    Chocolate Flourless Cake

  • 9 whole eggs
  • 1 cup orange liquor
  • 1 cup water
  • 2 1/4 cups of sugar
  • 1 pound of butter
  • 1 1/4 pounds of chocolate
  • Whip egg and liquor on high speed. Bring water to a boil. Add sugar and boil. Add butter and chocolate and stir until smooth. Add chocolate mixture to egg mixture. Pour mix into buttered and floured pan. Bake for 2 hours at 300° F in a water bath.
