Schokinag has taken the finest of their dark couverture, milk couverture and white couverture and formed them into the most perfect miniature chips you have ever seen. These chips have a count of over 50,000 pieces per pound.

Use our micro-chips to decorate cakes, pastries, ice cream desserts or use them on coffee drinks or to make gourmet hot chocolates and mochas. A little bit of these little beauties goes a very long way!

Gourmet Baking Chips



All of the chocolate companies have been battling to see who can make the cheapest chocolate baking chip. They add more sugar and use poorer quality cocoa beans. Schokinag decided to go in a completely different direction with this item. We created a gourmet baking chip based on flavor and richness, not price!

This product has the reduced cocoa butter content that you need for baking applications, yet it goes through the same thorough processing that we use for our couvertures. State-of-the-art refining and extensive conching develops distinctive flavor and smooth mouth-feel. This chip is so good, you can use it for ganache, and save money at the same time. Its biggest use is for a true gourmet chocolate chip cookie or muffin, but you will find many other uses for our gourmet baking chip.

These chips are 1000 count per pound, and have a gentle mound shape that is very attractive.

Pure Chocolate Liquor Chips



Schokinag takes some of the finest cocoa beans from around the world and roasts them to their peak of flavor, then quickly mills this blend to a fine consistency. This is chocolate in its purest form. Called chocolate liquor, cocoa mass, or baking chocolate, this is the basis for all chocolate making.

Chocolate liquor has always been difficult for the chef to use because it is usually packed in large blocks more appropriate for industry applications. Schokinag has recognized the need for an easy-to-use form of chocolate liquor.

We take our liquor directly from the milling process while it is still fluid, we temper it, deposit it on a stainless steel belt in small chip form, and then quickly pack it in poly-foil bags to seal in all of the freshness.

Now you can have the luxury of pure chocolate in an easy-to-use form. Let your imagination soar with the possibilities of new products you can create with these superb chips!

Gourmet Baking Chunks



We start with a rich, dark chocolate refined to a delicate particle size and conched to smooth and creamy perfection. We form continuous strips of the chocolate and then break them with a guillotine blade into mouth-watering chunks.

These delicious morsels will raise the standard for any chocolate chunk cookie, muffin or cake.

Schokinag Chocolate is the first chocolate manufacturer to offer a Trans Fat Free non-tempering/ dipping/coating chocolate to its customers in the United States. This product is currently available in coin-form in a 22 lb. case (10 kilograms) in three exciting flavors - milk (Baltic), white (Edelweiss) and dark (Concord).

Beginning January 1, 2006, all manufacturers of conventional foods must list Trans fat information on its nutrition label on a separate line, immediately under saturated fat content. We all need fat in our diets. Fats are a major source of energy for the body and assist in the absorption of vitamins A, D, E, and K, and carotenoids. Fats are divided into 3 categories and can be "good" or "bad." Trans fats, found in many foods (candies, cookies, baked goods and other processed foods), increase LDL or "bad" cholesterol in foods that increase our risk of coronary heart disease, increase the shelf life of foods and stabilizes flavor.
