Our Process
Giusto's Vita Grain® - The Milling Process
Giusto's contracts directly with farmers in the U.S. and Canada for
the production of organic and #1 commercial grains. These grains are
delivered to our mills in Utah and California, in addition to our mill,
warehouse distribution center and packing operation in South San Francisco.

Samples of every lot are collected and tested. Our testing includes not only
protein, ash and farinograph, but also functionality
(how each particular strain of wheat or batch of flour performs in bread
production). Considerable risk is involved for both the farmer and
the miller in pursuing such high quality grains, especially organic ones.
Changes in the weather and other factors may make the wheat crop poor
in tonnage or in quality. Since Giusto's will only mill #1 grains,
Giusto's may reject a poor crop and send it to another market.

From the South San Francisco and Utah warehouses, trucks travel in
all directions with organic and commercial grade flours, grains,
prepared grain mixes, seeds, dried peas and beans, spices, salts,
sweeteners, oils, nuts and dried fruits. None of the grain or flour
is fumigated. All of Giusto's organic flours are from their own
mills and are delivered fresh (organic unbleached flours require
a two-week aging and maturing period).

Milled to order, most of the grain is roller milled, stone ground or
hammer milled through an air-cooled system (keeping the product as
cool as possible to preserve vitamins and minerals), before being
bagged in bulk and distributed nationwide. The grain is blown
pneumatically throughout the milling process to remove dust and
byproducts, before being milled. The dust and byproducts are then
collected and sold as mill feed.
