from the kitchen • Pan Seared Salmon Filet with Star Thistle Honey Coated Mango & Avocado Brunoise
- One avocado, cut into small even dice
- One mango, cut into small even dice
- One grapefruit, with supremes cut in thirds and juice reserved
- One half red onion, cut into small even dice
- One jalapeno, seeded, veined and very finely diced
- 1/4 cup Bee Raw Star Thistle Honey
- 2 salmon fillets or steaks
Liberally salt salmon top and bottom and sear in a very
hot skillet in olive oil until medium rare.
Reserving half of the pepper, mix all remaining ingredients
adding a pinch of salt. Let stand for five minuets before
tasting and then deciding weather or not to add the remaining
pepper and more salt.
Serve salmon topped with Mango and avocado brunoise and a
side of black beans and yellow rice.
Serves 2.
