from the kitchen  •  Wild Raspberry Honey Crème Fraiche With Fresh Raspberries and Nuts with Honey Tuille

For Honey Tuille

Cream butter and honey together. Mix in flour followed by the nuts.

In a medium hot, nonstick frying pan, drop one teaspoon of mix in at a time. Let the mixture spread thin in the pan. When it begins to caramelize remove and set on the curve of a bottle or rolling pin to cool.

For Crème Fraiche

  • One cup fresh raspberries
  • 1/4 cup, unsalted pistachios, shelled

Mix one cup of crème fraiche with two to three tablespoons of Bee Raw Wild Raspberry honey. (One may substitute mascarpone, yogurt, or fromage blanc for crème fraiche.)

Split the crème fraiche mixture between four fruit bowls. Top with raspberries, pistachios, a drizzle of honey and finish with the tuile and perhaps a sprig of mint.

Serves 4 with tuilles to spare.
