Barbara's Bakery Recipe File
Puffins Muffins
Ingredients
- 1 cup Barbara’s Puffins Cereal (Original or Cinnamon), finely crushed (start with about 2 3/4 cups whole cereal)
- 1/4 cup canola oil or safflower oil
- 1/4 cup honey
- 1 egg
- 1 cup milk or milk substitute
- 1 1/4 cups unbleached or whole wheat pastry flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 1/2 cup granulated sweetener
Directions
Line a 12 cup muffin tin with paper muffin cups.
Preheat oven to 400° F.
Mix together flour, baking powder, baking soda, salt.
Add sweetener and crushed Puffins (if desired, add 3/4
cup nuts or raisins).
In separate bowl, mix oil, honey, egg and milk until
well blended. Add to dry ingredients, blending with
wooden spoon until combined. Do not over mix.
Fill muffin cups to 3/4 full and bake for 18 - 20 minutes.
Makes 12 muffins.

Yale Puffins Snack Mix
Ingredients
Snack Mix for 1 Serving:
- 1/3 cup Puffins Cereal
- 2 thin 3-ring pretzels
- 2 small (mini) cheese rice cakes or other variety (cut in half if desired)
- 2 tsp. cranraisins
- 2 brazil nuts (cut into smaller portions if desired)
Snack Mix For 4 Servings:
- 1 1/3 cups Puffins
- 8 thin 3-ring pretzels
- 8 small (mini) rice cakes cheese or other variety (cut in half if desired)
- 2 1/2 Tbsp. cranraisins
- 8 Brazil nuts (chopped if desired)
Directions
Put all ingredients into a plastic snack size baggie for an enjoyable treat!
Approximate Calorie Count 180

Alpen Muesli Scones
Ingredients
- 1 cup Alpen
- 2 cups all-purpose flour
- 1/4 cup dehydrated cane juice or sugar
- 1/4 tsp. salt
- 1 Tbsp. baking powder
- 1/3 cup butter
- 1/2 cup raisins (or other dried fruit)
- 2/3 cup milk
- 1 egg
Directions
In a large bowl, combine flour, ALPEN, dehydrated cane
juice, salt and baking powder. Cut in butter until
mixture resembles coarse crumbs. Stir in raisins
(or other dried fruit).
Lightly beat together egg and milk. Add to dry mixture and
stir with a fork just until combined.
Form into a ball and knead gently on floured surface about 10 times.
Roll and press dough into 3/4" thickness; cut into wedges,
place on ungreased baking sheet and bake at 375°F for about
14-16 minutes or until just golden.
Serve warm with butter and jam if desired.
Makes 8 scones.

Organic GrainShop Bars
Ingredients
- 3 tablespoons butter
- 1 tablespoon natural peanut butter
- Natural marshmallows cut into 20 - 1" cubes
- 2 1/2 cups Barbara's Organic GrainShop
Directions
Melt together 3 tbls. of butter, 1 tbls. natural peanut butter,
and marshmallow cubes. Stir-in 2 1/2 cups of Organic Grainshop.
Pour the mixture into a 8" x 8" square cake pan, that has
been sprayed with a non-stick spray.
After allowing the mixture to cool slightly, cover the dish
with wax paper, and gently press the mixture flat. After cool
and firm, cut into 16 square bars.
Store the bars in a zip-lock bag.
Makes 16 squares.

Organic GrainShop Muffins
Ingredients
- 4 cups Barbara's Organic GrainShop
- 1 cup boiling water
- 1/3 cup unsalted butter, softened
- 1 cup (packed) light brown sugar
- 2 eggs, beaten
- 2 cups plain, non-fat yogurt
- 2 tablespoons water
- 2 1/2 cups unbleached flour, sifted
- 2 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 cups raisins
- 1 cup nuts - optional
Directions
Preheat oven to 400° F.
Line two (12 muffin) muffin pans with paper muffin cups or coat with non-stick spray.
Pour 1 cup boiling water over Organic GrainShop. Set aside.
In a large bowl, cream butter and brown sugar.
Add beaten eggs, yogurt and 2 Tbsp. water to the
creamed mixture. Then add flour and other dry
ingredients. Fold in moistened Organic GrainShop,
raisins and nuts (if desired).
Fill paper muffin cups or coated muffin tins
to 3/4 full with batter.
Bake for 17 minutes.
Muffins are done when toothpick or cake tester
inserted into center of muffin tests clean.
Yield 24 muffins.

Alpen Apple Almond Cheese Pie
Ingredients
- 1 cup Alpen
- 1/2 cup soft butter
- 3/4 cup firmly packed brown sugar
- 1 tsp. almond extract
- 1/2 cup all purpose flour
- 8 oz. cream cheese, softened
- 1/4 tsp. grated nutmeg
- 1/3 cup sliced almonds
- 1 egg
- 3 large cooking apples, peeled and sliced
Directions
In a large bowl cream butter and 1/4 cup brown sugar.
Add 1/2 tsp. almond extract, flour and Alpen. Mix well.
Press mixture evenly around base and sides of a 9" glass
pie plate. Set aside.
Beat together cream cheese, 1/4 cup brown sugar, egg and
1/2 tsp. almond extract. Pour into crust.
Combine nutmeg, remaining brown sugar (1/4 cup) and
sliced apples. Spread over cheese mixture and sprinkle
with almonds.
Bake at 450° F for 5 minutes. Reduce heat to 350° F and
bake an additional 30 minutes or until apples are just
tender. Serve warm or cold.
Makes 6 - 8 servings.
