1 green papaya, peeled and cut into matchstick slices
1 slightly firm mango, peeled and sliced into matchstick strips
1 small cucumber, thinly sliced
4 oz. Annie Chun's Maifun Rice Noodles (cooked, drained and rinsed as directed for salad)
1 lb. medium sized prawns, cleaned and cooked
1 head of leattuce, leaves separated, rinsed and dried
Peanut Dressing
¾ cup peanut butter
3 tbsp soy sauce
2 tbsp sugar
3 tbsp sesame oil
2 tbsp vinegar
4 tbsp chicken broth (optional)
2 tbsp chopped fresh cilantro
(or try Annie Chun's Thai Peanut Sauce)
Mix papaya, mango, cucumber, cooked rice noodles, and prawns in bowl. To make peanut dressing, combine ingredients listed and mix well. Add peanut dressing to noodles and toss. Arrange whole lettuce leaves on large platter and divide noodle salad among lettuce leaves. Wrap lettuce leaves to enclose noodle mixture and enjoy.
