Chicken Chow Mein with Snow Peas and Cashews

  • 1 pkg Annie Chun’s Black Bean Noodles & Sauce
  • 3 tbsp cooking oil
  • 3 cloves fresh garlic, chopped
  • 6-8 oz chicken breast, thinly sliced
  • ½ small onion, thinly sliced
  • 2-3 oz fresh snow peas, rinsed and dried
  • ¼ cup dry roasted cashews
  • Cook noodles as directed. Rinse with cold water, drain well then set aside. Heat a stir fry pan over medium high heat. When pan is hot, add oil and garlic. Cook garlic until fragrant, then increase heat to high and add chicken. Stir fry chicken for about 3–4 minutes, until cooked then set aside. Add remaining 1 Tbsp. oil and briefly stir fry onion and snow peas until tender, but still crisp. Reduce heat and add in noodles, chicken, vegetables and sauce. Mix lightly to coat and heat thoroughly. Garnish with cashews and serve.
