6 oz. Annie Chun’s Chow Mein or Soba Noodles (cooked as directed on package)
¼ cup thinly sliced red bell pepper
2 cups chopped romaine lettuce (loosely packed), or cole slaw
1 cup English cucumber, cut into matchstick slices
¼ cup chopped scallion
Glazed walnuts or chopped peanuts (for garnish)
Combine first three ingredients for dressing. Mix together chicken, noodles, and remaining ingredients (except nuts) in a bowl and toss with dressing (add to taste). Garnish with glazed walnuts or chopped peanuts.
