Rice 101

In its natural state after harvest, the rice is called paddy and the grains are enveloped in a hard outer layer. Once this is removed, brown, or whole grain rice, is obtained. It can then be polished to produce white rice. The outer layers of the rice (removed during the polishing process) are rich in nutrients and minerals. Whole grain rice is therefore more nutritious than white rice which, in turn, is easier to digest.
